January 29th, 2024 we bottled the 2021 vintages of the following wines…

- Houyi Vineyard Cabernet
- Sage Ridge Vineyard Cabernet
- Rocca Vineyard Cabernet
- Edcora Vineyard Cabernet
- Antithesis “Experimental Red”
Tiny quantities of each that are POWERFUL and INTENSE wines with length for days…
I’m very happy to have these exceptional wines in bottle and the theme of this video captures the tone of these wines… ELECTRIC and like a party in your mouth!

Barrel Fermentation of Cabernet Sauvignon
Watch as winemaker Jason Moore takes a new French oak barrel, pops one of the heads, and rebuilds the barrel for barrel fermentation of our single vineyard Cabernet.
The three main things we gain from barrel fermentation…
- Early oak integration
- Color stability
- Lush texture

Collection is made in extremely small single and double barrel batches and so is available only by allocation. Your allocation of this wine is based on prior purchase history with club members automatically receiving the highest level of allocation regardless of their purchase history.

We Don't Make Salad
We go to extreme measures to ensure that what goes into your wine is nothing but the cleanest, most amazingly pure fruit…
Later that night, as we continued to crush, I removed 2 lizards and a huge BLACK WIDOW from the sorting table… NOT-KIDDING.
Sticks, twigs, leafs, rotten moldy clusters, spiders, lizards, bugs… anything thats NOT a perfect berry is removed.
By the time we are done sorting, the fruit looks like perfect beads of fine caviar.
